Keto Comfort Food: White Chicken Chili

September is here! For some reason that screams fall, even though it's still in the 80's-90's here. All I can think about is pumpkin patches, apple orchards, hoodies, and how forever grateful I am for the public school system (hallelujah, they're back in school! How do people keep their kids busy ALL summer!?).

The changing leaves and fall weather mean one thing, ALL the comfort foods are making their way back into our lives. Yaaasssss queen. Just because you're eating keto, doesn't mean you have to give these up! It is so easy to tweak some of your old favorites to maintain your new lifestyle, and trust me, the flavor stays the same. 

One of the staples for my family during fall is mama's white chicken chili. I get compliments on it ALL the time, everyone is always asking for the recipe. In fact, it's the main course for our annual Halloween Bash, between that and the keg of craft beer, I'm not sure if the kids or the parents love trick-or-treating at our house more! 

Recently, I sat down to plan out meals for the week, and it hit me, if I take out minimal ingredients, this is totally something I can still enjoy...and the real bonus, I can make a large batch and freeze it. It honestly reheats even better. Seriously. 

I jumped on it, figured out the macros, and posted my prep work to my IG stories (if you aren't following me, GO FIND ME, ShelbyLynJ) and got a ton of inquiries for the recipe. So, let me break it down for you, and then I'll post a printable version for you on the bottom. Here goes, guys!  

First things first, you're gonna get ready to chop those onions. This is probably the highest carb item in the mix, and they don't even contain that many, how awesome is that? Anyways, get those all chopped and ready and break out the stock pot. This is where you will simmer the onions in the oil, with garlic and lime juice - I use fresh limes, no judgement if you want to just get the bottle and cut out some work. Do you, girl, do you. 

While that's sauteing and browning, prep the chicken. To make my own life easier, I am a busy lady, and I'm sure you are too, I just buy rotisserie chickens, and pull the meat off. This actually adds even more flavor, so, really, it's the best shortcut ever. 

Toss the meat in with the onions, chicken stock, diced chilies, cilantro, and ALL the spices. Listen, your girl likes it spicy, and I love me some flavor. That being said, I'm heavy handed in the spice department. I listed measurements for a great starting point for you, but in all honesty, there's no such thing as too much garlic, ever...and I don't measure the chili powder. I'm a fuckin' rebel, what can I say. Stir it all up, and let it simmer. I usually let it go for about an hour, long enough for my husband's mouth to water, and the smell to permeate the whole house and make me feel like Martha. But, like, post-prison Martha. For sure. 

Now, this is where it gets exciting. You're gonna pull it off the burner, add in your whipped cream cheese and stir until it all melts, before you finish it off with the heavy cream. See how keto can be so easy and flavorful!? Girlfriend, this chili is going to rock your world.
